It also has an exceptional flavor if it is made into tofu skins or thickly fried. The raw homegrown wood ear mushrooms from the Shimogiri area where the guesthouse is situated are also recommended. They have a springiness to them, and when eaten with sesame oil and salt, are reminiscent of raw liver. The various kinds of "oden" are also delicacies.
